Default tabasco type hot sauce

This is pretty simple, but it makes a great sauce!

1 quart canning jar full of washed, destemmed peppers, packed loosely (your choice of how hot)

white vinegar

1 teaspoon salt

Pack the washed destemmed peppers loosely in the jar. add salt to jar (you can use iodized with no ill effects). Fill jar to 1/2" of top with white vinegar. place flat lid and canning ring on jar and close jar. shake jar to remove air pockets, if level of vinegar goes down after shaking, add more vinegar.
Place in warm place out of direct sun (room temperature) for about 3 months.

After this time, peppers will be soft. Dump contents of jar into blender and blend until liquefied. Strain through strainer and put in hot sauce bottle in refrigerator.
This can also be frozen.
