Default Crockpot Kalua Pork in banana leaves.

This recipe uses a portion of a leaf for wrapping around the pork roast.

Kalua Pork or Chicken

3-4 pounds pork butt or shoulder, or chicken thighs
1 to 2 tablespoons Hawaiian rock salt
Freshly ground pepper
2 tablespoons liquid smoke
1 cup water
head of cabbage
Enough washed banana leaf to wrap around pork twice

Line bottom of slow cooker with banana leaf. Rub pork or chicken generously with salt, pepper, and liquid smoke and place on banana leaf. Add water. Fit remaining banana leaf around outer edge of crockpot and over pork. Cover and cook on low setting 8-10 hours or til pork shreds easily. Remove banana leaves. Cut cabbage in wedges and add to crockpot. Cook an additional 20-30 minutes. Serve with rice. Serves 6.
