Spraying fruits with water prior to a freeze encases the fruit in a layer of ice (obviously) which keeps the fruit right at freezing, while the surrounding air temp drops even lower. If not for the ice, the fruit would suffer much worse damage due to the lower air temps. Basically, the ice does insulate it, sounds unbelievable but it works!
