Default rotting leaf stalks

trying to store these dry rooted,, the leaf stalks seem to be rotting down by the cormb,, they have been kept in the garage for about three months now, never gets below 40 degrees,, think they are musa bajou's

the one in the center I have peeled down a little, the dark portion seems to be rottining,, just turning to mush,, the outside two I have peeled all the way down,, question is should I remove all the mushy part? I have about 15 of these doing the same thing,, they are about four feet tall and under,, I also have 6 or more that are 7 or 8 feet tall,, seems that they might be trying to do the same thing
