Sabal Minor var. Louisiana and Sabal xTexensis are most likely the best for growth and cold tolerance at the same time. Both can form a trunk but I think xTexensis can grow larger.

All Sabal are slow without heat. They grow fast when the temperature is above 86F. They also become much more cold hardy with more summer heat.

Seedlings are much weaker than adult plants. In a pot (roots more exposed), most Sabal can survive around 20-25F and in the ground with leaf protection around the plant, about 5-15F all depending on duration and daytime highs, winds...

Once they gain size, they'll become much hardier.
