Default When to stop watering bananas for winter?

What temps should I stop watering my bananas for the winter? And how long can they last? My winters usually last about 5 months in zone 7A. I heard water kills bananas when they’re dormant so I’m trying to figure out when to cover them up. I’ve heard once temps drop below 55° F they go dormant but mine are still growing.

Growing Basjoo, Dwarf Orinoco, and Velutina.
