Hello Deerabbit - How long ago did the first fruit appear? In general it takes about 4 months of warm weather to ripen a bunch and I think Malta is pretty warm in summer. So if you have had the fruit for several months and they are getting round and plump, you could leave the bunch on the plant until the first banana starts to change colour, then cut the whole bunch down and wait a few days for them to ripen. It all depends on what type of banana you have and how long the fruit has been on the plant really. If it is an eating banana, it will be naturally sweet when ripe. If it is a plantain or seeded banana, you will need to either cook them or just enjoy the look of them.
