Pretty much true for most varieties, although some prefer a longer hang time for ripening. Some of the red bananas need to hang until they are nearly black. Some are ripe when they are green, so it varies by type. But as a general rule, yes, when the first fruit yellows, you can cut the bunch and hang it somewhere protected to keep bugs, birds, etc away from them while they ripen. It may also help reduce the chances of splitting in certain varieties.
