If you're going to do that, you need to cut the bunches when they're mature but still green, then keep them in dark cold storage (about 5-10c) until about a week before you want to eat them. Then they go in a brown paper bag with an apple or an avocado and into the sun, to force them ripe.

The best cultivars for this treatment are probably the FHIA bananas, Gran Nain (the Chiquita cultivar), and the Cavendishes.
