If you google hydrangea cuttings, you should find some instructions for rooting them. I'm not sure about root cuttings, but stem cuttings of hydrangea are supposed to root very easily.
I had one with all white leaves on one side and set it behind the others to save it for myself. Someone bought it before I had a chance to take it out of my plant sale area.
The cuttings will remain the same ....they'll just have roots and be independent of the original plant.
