Green mango salad
Yesterday I was at Premier Nursery in Fallbrook, CA where there is a moderate-size Haden Mango growing next to the office. It is currently loaded with green fruit between 2 to 4 inches long.
During the lunch-time break, the ladies working in the greenhouses came to the tree with a ladder and began removing many of the fruits, collecting about 10 gallons worth. They peel it at amazing speed with a parring knife and then cut the fruit just as quickly off the seed into large salad bowls with lettuces and other greens. The fruit would be considered "unripe" by many people, but had an excellent taste -- sort of what you might imagine a tropical cucumber would taste like.

I sliced one of my Glenn mangos a little too early last year, but still found the flavor to be outstanding. It was crunchy, sweet, and a little bit sour. I've spoken with many people around here that prefer to eat a mango before it becomes ripe.
However, I have a sweet tooth.. so, I prefer my mangos fully ripened. A fully ripened Nam Doc Mai mango has a hint of spice to it. I LOVE it! |

You can also try this mango salad : Do the same as the lady did but cut it as little 1/4" square. Put it in a bowl. Cut the tomatoes the same size and also the onions. Mix all of the ingredients and add salt and pepper. This is very good for fried fish or anything fried. Eat with rice.

In Colombia they call it "Mango Viche" and eat it with salt! They are actually more expensive green sometimes.
