Default "lazy housewife" pickles for freezer or refrigerator

Lazy Housewife Pickles

7 cups cucumbers sliced 1/4" ,peel if you want first, but you don't have to

1 teaspoon salt

2 cups white sugar

1 cup sliced onion

1 cup chopped bell pepper

1 cup cider or white vinegar

1 teaspoon celery seed

Mix cucumbers and salt in a bowl and let stand one hour. Do not drain! Add pepper and onion to cucumbers.

Heat vinegar in microwave until hot, then add sugar and stir until it dissolves. Add celery seed. Pour dressing over cucumber mixture and stir until well coated. Cover and refrigerate overnight then serve. Store in refrigerator three days, stirring once a day, then they can be frozen for up to one year. Just put them in freezer containers, leaving one inch headspace and including the juice with the pickles. Thaw in the refrigerator to serve

This will also keep in refrigerator at least one month!

Neat recipe! Would this work for pickling hot peppers as well? I usually grow a ton of hot peppers and would like to try pickling them next summer. I have dried them, froze them and made various hot pepper jellies lol.

I don't know if it would work for hot peppers and keep as well at basement temperature as these do with cucumbers, but I have a friend that does jalapeņos with bread and butter pickle mix and then cans them, and they are excellent. If you made the peppers this way and then put them in the freezer, then they would of course keep for a long time. I do have a good pickled pepper recipe, if you go to northerntropics.com and click the recipe link, you will find it (and many other recipes, too).

Nice recipe! It's really easy to cook such stuff and it's very tasty. Here are some apps for lazy housewives
