Banana Salsa
BANANA SALSA
1 Large, ripe banana, peeled and diced 1/2 red or green bell pepper, seeded and diced 2 Tbsp. chopped fresh mint or cilantro 1 scallion, trimmed and finely chopped 1 1/2 Tbsp. fresh lime juice 1 Tbsp. brown sugar 1 1/2 tsp. minced peeled ginger root 1 1/2" tsp. olive oil 1 tsp. minced Scotch bonnet pepper or I Tbsp. minced jalapeņo pepper sea salt and fresh ground black pepper to taste In a small bowl, combine all ingredients and toss lightly to mix. Serve within 1 hour. Makes 1 1/2 cups. |

Any kind of yellow or red banana should work! The recipe I had was made with a store bought banana and habanero peppers. It was really tasty!
