Need something to make with ripe plantains...
So I have three ripe plantains, and I need to make something out of them before they go bad. Any suggestions?

ha ha ha here ya go ! kinda basic stuff but you did not say you wanted something special One frying pan 3 tbs olive oil Slice plantains about ½ inch thick (make little round pancake like slices) Heat pan on medium heat Place sliced plantains in pan . Flip after 3 to 4 minutes allow cook again on second side Brown do not burn them , remove from heat on to a clean plate Allow to cool Then eat them

Yup..they are good when fried. Better yet, go to the oriental store, and buy a spring roll wrap(lumpia wrap). It looks like a egg roll wrap except its very thin. Wrap the half sliced plantains with the spring roll wrap. Then fry them..its crispy and sweet-a-licious. Add an ice cream if you wish.. Delicious.
You can mash it, and mix it with donuts mix or pancake. Then fry it; there's your banana donut. But most of the time, I don't have time to do fancy cooking, so I just slice a little hole on the banana(this is to keep it from exploding), then I put it in the microwave. Cooked similar as in steam pot or boiled. Taste like cooked sweet potato. Yum.

Cut the plantain in slices. Cut bacon slices in half. Break toothpicks in half. Wrap the banana slices in bacon and secure with broken toothpicks. Fry until cooked. My charter guests in the Caribbean LOVED these!

Green plantains are delicious fried but I fried a ripe one and was amazed at how sweet it was. All those years in Key West and all those plantains I missed cause someone said they were terrible to eat. Not anymore.
