We have had a Mojito Cuban party for the last 8 years. This was the third year for a suckling piggy. We ate it all too!

Good work Porkpi - we have a beach party each year with a roast pig - but the last one was 78 pounds and took 3 men to carry it. But they are good eating! That one you had looks good - not too fat. I can taste it now!!

Up here we call it a pig pickin'. We all just stand around an pick meat off the pig. No utensils, no plates. Just hands grabbing meat and brown crispy skin and scarfing it down.

Yep!


We'd put a flock of vultures to shame, but thats how good roast pig is!

Sometimes that's the best way to enjoy food! Did yo ucook it in the banana leaves also? How did you prepare the piggy for the fire besides butterflying it and the slashes?
