Bananas in Thailand
I like this blog, written by a Swede who runs botanical and food-producing garden in Chiang Mai, Northern Thailand. He has an advanced degree in some area of plant science and runs educational programs and tours at his Dokmai Garden. He also sponsors a program to save endangered orchid species.

Never dried bananas but when I was a boy I would pick the apples and my mother would dry them in the sun on several pieces of tin roofing. She stored them over the winter in a cloth bag and we would have apple cobbler for Sunday dinner. Such memories!
