Margarita is edible variety from what i know and siam yellow is ornamental only, non-edible. I know of them as 2 different varieties.

John_ny, the Siam Yellow listed by them could be the quite recently discovered species from the sect Rhodochlamys, Musa siamensis from Thailand. The bud is yellow in color.

i got my siam ruby last year in may,the colour was red on the foliage,a pup was with it when i got it,it all so had red on the foliage,i separated it from the mother plant last year, in september, i cut off the foliage to give it a good start in its new pot,this year all the new leaves that have came out are light yellow and green,its lost all of its red,it looks like a musa magarita now with the photos of musa magarita that i have seen.the mother plant is still producing red leaves.

It seems to me that SR is highly variable in all of its forms and seems prone to change its leaf color at the drop of a hat. I believe it is a chimera, and as such, highly unstable. I had one that I purchased back in '07 that grew great in about a 3 gallon pot all year, the next year I put it in the ground and it started out OK, then started delcining for no apparant reason. This year it is in a pot and is only about 4" tall. Seems like a really weak plant all in all. I certainly hope this one perks up because it is beautiful and I don't want to loose it.

margarita is just a yellow siam ruby. At least it's supposed to be. Some of my margaritas I ordered lately have turned red, so I guess they really can't tell until they get bigger.
Siam yellow is the ornamental yellow blooming banana.
