Jeff, my Cardaba sent blooms out late in the season too. I cut two of them off when the stems collapsed and left the last one to go through the winter. Will yours make it through the winter and finish in the spring? I just harvested the oldest bunch of Cardaba. You can see the pictures here: What did you harvest today (bananas)

Unfortunately not, the flower and fruit will most likely freeze in late January. The trick around here is to keep them FROM fruiting this late in the season. If you can dial back the water in the Fall, they will fruit first thing in the spring. This is ideal but tricky since we naturally get tons of rain even when it is "dry". The trunk will not freeze here, but since it flowered it wont make a difference. Cardaba is a new one for me and has proven to be super vigorous.
