Default Banana Butter

3 1/2 lbs ripe bananas
3 cups sugar
1/2 cup lemon juice
1/2 cup finely chipped red maraschino cherries(optional)
1 tsp butter or margarine

Mash bananas, measure 4 cups into kettle. Add other ingredients. Bring to hard boil, stirring occasionally. Reduce heat; simmer uncovered 20 minutes, stirring often. Pour into hot jars, leaving 1/2 inch headspace. Adjust lids.Process in water bath canner (half-pints) 10 minutes (pints) 15 minutes.

This sounds quite yummy! Would be great to substitute Splenda for sugar to not totally blow the low-carb diet.
