I have some excellent recipes for Pheasant and Elk and Antelope, Venison just never cuts it, always tastes like the animal was eating pine needles all year to me. Lucky to have all those pheasants YUM, I love Grouse too!!!!

Yeah, backstraps are really the only good eating on venison. Venison coarsley ground & used in chili is excellent, but the rest is good as a long cooked roast w/ onions & then make a gravy w/ it. Seems the 'gamey' taste comes out the longer you cook it.
If I ever get access to pheasant, Joan, I'll ask you for your recipe!

Not True! I process my own venison and there is no "gamey" taste. There are 3 ways I use venison, backstrap and hindquarters can go into cube steak, all the rest goes into either ground meat, or jerky--none of it has a gamey taste. The process starts with a minimum of 3 days soak in icey cold water, draining and replacing water/ice every day. One other key factor is removing all of the scent glands as you process the meat. Except for the ground meat, most of my recipes cook venison very quick to retain tenderness.

Oh yeah, I made a bunch of dried venison/jerky & it was good. I didn't know about soaking the meat in ice water. Where would those scent glands be?

I HAVE MADE JERKY ALSO AND THAT WAS GREAT, I WAS ALWAYS INSTRUCTED TO REMOVE ALL THE "SILVER SKIN" TOO!!!!! i JUST HAVE NEVER HAD A PIECE OF CHOP OR ROAST THAT TASTED GOOD TO ME, MUST BE THE SOAKING IN ICE WATER THAT DOES THE TRICK

If you have Firefox for your browser you can download the plugin called Addblock Plus and then you won't see 99% of the adds on any of the websites you visit including this one! Once you download it just click the button to subscribe to the US and it will block all the known US adds. If you are from another country or surfing websites from another country then look for that area in the subscription list and add it too. It works great!

The scent glands are in the hind legs near the bone--right under the scent pads--a little above--about the size of your finger. I can't remember if there are any on the front legs, but I trim all the fat and facia from each muscle bundle as I cut it up.

My jerky recipe is not written, but I use jerky cure you can buy at Walmart. I add a lot of additional spices, but I don't measure. I add red pepper, white pepper, black pepper, salt and sometimes soy or worchestershire sauce. I put that in the fridge for a day or 2 and then I dry it to about the consistiency of dry cured ham on my electric smoker. I then vacuum pack and freeze it. A pack will keep at least a week after it is open, but that rarely happens.

Here is what I do with my cube venison chops:

I salt and pepper the cubed chops, coat them with flour, dip them in egg and then a mix of seasoned bread crumbs with about 1/3 parmesan cheese and fry in shallow oil. I then use the fried chops in a sandwich with garlic french bread, swiss cheese, lettuce and jalapenos (mayo and cajun mustard optional).

I have also used the fried chops in recipes for veal parmesan.

I rarely cook a roast, but it is best cooked rare. Otherwise, you can cook it slow and long, but it will always be stringy.

My wife was always truning her nose up at venison until I found out about the icey water treatment. Now she loves it and never complains about gamey taste.

I got a email showing pics of the biggest brown bear I ever saw. It was charging after the guy who shot it who just happened to bring his new gun along. Quite a story w/it!
I also got email w/ pics of a mule killing a cougar who was going after the pet dogs. If anyone wants to see these, pm me your addy & I'll FWD them to you.

Last weekend around 5:30, while still light out, we were driving down hy 60 (30 mile north of MKE) & saw a herd of 17 deer about 1 block away in a field eating old corn in the snow. What a treat! To see that many so close. Cars going by didn't affect them. Yet, during hunting season, we - & hunters hardly saw any further north where all the hunters go.
Here is a email I just got. It came with a pic but I guess I can't post it cuz it shows a dead deer that got hit by a car....

---People in Kankakee County, Illinois have a warped sense of humor.

It must be something in the coal-infused water.

This is the pull off at SR 17 and Hopkins Park Rd.

A deer was hit there.

The couch was dumped there previously.

Day two the deer was on the couch.

Day three the end table and lamp showed up.

Day four the TV and TV stand showed up.

The Trooper had to call IL DOT because of all the people stopping to take pictures.

The cardboard caption in front of the deer on the couch reads,

"Sorry Hunters.

Obama ruined healthcare.

We can't afford to have injured hunters on our conscience,

so I'm staying home!

I picked up a book when I was in Alaska about bears that killed people
One bear was shot & kept running at the hunter...killed him & then got 50 yards away & dropped dead
The hunter had hit the bear in the heart & the bear still killed him

Some unreal stories in that book
Not sure if I still have it somewhere
