from my experience margaritas are never happy. I've gotten a few to 5-6 feet, but they never do well for me long-term. they are a version of siam ruby which was found in Thailand, which tells you...

I dig mine and keep it in the refrigerator in one of those "keep produce fresh" bags. They keep forever. Then I grind it one root at a time and use it like that.

I've been doing the same thing for years. I just don't mulch thickly over them though. I just let the stalks die down and mulch themselves.
